Cake
1-1/3 c. cooking oil
2 c. sugar
4 eggs
(Beat the shit out of with a mixer.)
2 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
(Mix dry ingredients in a bowl together.)
Add dry mix to egg mix and then add
2-1/2 c. raw grated carrots.
Bake for 45-50 min. at 350 degrees.
Frosting
8 oz. cream cheese (have soft)
1 stick butter (8 tbsp, have soft)
Beat with mixer. Then add:
2-1/2 c. powdered sugar
2 tsp. vanilla
Beat until light and fluffy.
Optional: Top with jelly beans.
