Stuffed Mushrooms

What you'll need:

12-15 ounces medium to large fresh mushrooms
extra virgin olive oil
1 cup Italian bread crumbs
1 cup grated parmesan cheese, fresh
1 teaspoon ground pepper, fresh
1 cup fresh chopped Italian parsley (not regular parsley)
1 tablespoon fine chopped garlic

Preheat the oven to 350 degrees. Rinse the mushrooms and pat dry with a paper towel. Pull the stems, leaving the caps whole. Coat the bottom of a baking pan with 1 tablespoon of olive oil. Add the mushrooms stem side up.

Mix the rest of the ingredients in a bowl. Using a spoon, fill each cap with the mixture and then cover the mushrooms with the remaining mixture. Cover the pan with foil and bake for 30 minutes. Remove the foil and set oven to broil. Broil until the tops are crisp (1 - 2 minutes). Let cool for about 5 minutes and enjoy.

Serve as an appetizer or side dish. Great with white wine.
